I began thinking of Mother’s Day and what special meal I will prepare to honor my Mom.  The meals Mom once prepared for our large family were a challenge to say the least.  Planning and preparing three-meals a day for a family of nine with four active, growing boys and three girls would be a daunting task for most. My Mom had to plan BIG, make enough food to feed a small army and serve everyone while it was still hot–no small feat!  I am proud to say that Mom managed all of these tasks awesomely as she knew her way around the kitchen and our food was great.

In our kitchen, we had a large, round table that seated 12 comfortably. In the center was a sizeable lazy susan turntable that would spin almost endlessly during meals. I’m not sure where the term, “lazy susan” originated. Certainly, ours was not lazy; it was a speed demon! Bowls of vegetables and platters of meat were served at mealtime and would literally fly around our dinner table faster than race cars at the Daytona 500.  When the food stopped in front of you—you grabbed it quickly as you may not see it again for a while. Yes, “second helpings” were available but with appetites of vultures, the boys could make that a challenge.  Mom fed her family well, no one complained, and to this day, we all have many fond memories of our meal times together. Thanks Mom, well done!

When it came to Mother’s Day, anniversaries or other special occasions, we enjoyed pampering Mom (and Dad) with an awesome breakfast in bed that the “kids” had prepared on their own. This was a delightful surprise for both parents, even though we had to wake them early before they got out of bed. It also provided Mom a well-deserved break from the kitchen routine. 

Breakfast usually included eggs, bacon, pancakes, coffee and juice. We each had our own responsibilities in preparing the meal, and those who were not old enough to cook had clean-up duties. As my grandfather would say, “Many hands make light work,” and certainly we had many hands. 

Fast forward a few decades as I still enjoy pampering my Mom with a decadent meal that she doesn’t have to prepare. Now, these meals are healthier and plant-based! This year I’m planning a special brunch on the lanai before the central Florida heat becomes too stifling! I’ve been creating and modifying a few recipes that are sure to please and wish to share them today for others to enjoy.

On the Mother’s Day Brunch Menu 

  • Whole Grain Blueberry Pancakes
  • Garden-Fresh Omelet
  • Chocolate Banana Muffins
  • Double Chocolate Peanut Butter Pie

 

I believe pancakes are best served on the weekends when you have time to enjoy them most. Although banana pancakes were more common during my youth, occasionally blueberry pancakes were prepared. Knowing how beneficial blueberries are to our health and the fact that they are readily available both fresh and frozen, these Whole Grain Blueberry Pancakes are always a favorite. However, I’m dressing them up just a little for Mother’s Day and adding a Warm Blueberry Syrup.

As mentioned earlier, eggs were usually a part of the “breakfast in bed” scenario. Being a whole food, plant-based vegan, I now need to be creative. Recently, I’ve been modifying several “chickpea omelets, and include my Garden-Fresh Omelet with fresh tomatoes, broccoli, onions and mushrooms. Good news—if there are any leftovers, they do warm-up nicely.  

A brunch wouldn’t be complete without something sweet. Chocolate Banana Muffins complement any brunch buffet. Sweetened with dates, these muffins are not overly sweet, but the rich cocoa taste is sure to please. There are many health benefits to justify our love of chocolate as it contains iron, zinc and selenium. All of these nutrients help our bodies function properly and strengthen our immune system.

Most women I know love chocolate and since it is Mother’s Day, we are making chocolate the grand finale. The show-stopper will be the Double Chocolate Peanut Butter Pie! Actually, I made this for Mom on Easter and she let me know that she would appreciate, “Three of these pies each week!” Of course, I know that she was just joking…or was she?
